Beef Enchilada Soup – The EASY Way!

We love enchiladas for dinner, and this soup packs in all the flavors of enchiladas, but is even faster and easier to make.

It might just be the ultimate dump and go recipe because it is so quick, easy, and effortless, but in the end, it tastes like it has been slow simmering all day. No sacrifice in flavor here!

What to Serve with Enchilada Soup

Side Dish Ideas

This soup is very hearty and makes a great lunch or dinner option. You don’t even need to make anything else to have a filling meal. However, there are a few things that go really well with this soup if you want to add a little something on the side.

  • Side salad with creamy jalapeño ranch dressing
  • Buttermilk cornbread
  • Chips and dip- try salsa, guacamole, or pico de gallo

Topping Ideas

Even if you decide not to make a side dish, I highly recommend grabbing a few toppings to let your family load up their bowl. The possibilities are endless, but here are a few of our favorite soup toppings.

  • Sour cream
  • Shredded cheddar cheese
  • Corn tortillas cut into strips
  • Freshly chopped cilantro
  • Diced avocado

You can choose one or add a few toppings and sides to make a wholesome, well rounded dinner.

This Enchilada Soup recipe is as simple as promised! Just one pot and a few pantry ingredients for a family friendly meal.

In this section I am going to go through a few tips and tricks I use when making this recipe to get the absolute best and most delicious results.

Ingredients + Substitutions

  • Ground beef– You can use any ground beef, but I like to use lean ground beef so there is less grease to drain. You can also substitute ground turkey, chicken, pork or a combination of them.
  • Taco seasoning You can use store bought or make your own. If you have special dietary restrictions, I recommend going with the homemade.
  • Onion– White, yellow, sweet or red will work. I used yellow here.
  • Red enchilada sauce– You can choose mild, medium or hot. This will determine the heat level of your soup. I used mild and it was not spicy and very kid friendly.
  • Zoup Beef Bone Broth– This broth makes the biggest difference! In a broth based soup, you want a high-quality broth that will give you outstanding flavor, rather than make the soup the soup taste watered down.

  • Diced tomatoes– I use regular, but you can also substitute tomatoes with green chiles.
  • Sweet corn– You will use one can drained, however 1.5 cups of frozen corn can be substituted for canned.
  • Black beans– You will not need to drain the black beans. This will add to the flavor and help thicken the broth. If you prefer, you can also use pinto beans.
  • Green chiles– these give a flavor boost without making the dish spicy. If you love the green chile flavor, you can double the amount in the recipe.

Recipe Tips

  1. The beef– I mentioned above to buy lean ground beef, but in addition to that you will want to make sure to drain the beef well after cooking. This will remove the bulk of the grease from the meat. If you don’t drain well, you will see the fat rise to the top of the soup after everything is combined and to me it is less appetizing.
  2. Use high-quality broth – I cannot stress enough how much of a difference in flavor the broth can make. Having a rich, flavor-filled broth, will give you a soup that has amazing flavor. Zoup! Good, Really Good® Bone Broth is always my choice!
  3. Thicken the soup– If you prefer a thicker broth, you can mix 1/4 corn starch with water to make a paste, then slowly pour it in to the soup and stir it as the soup is simmering. This is completely optional, and not something I usually do for our family, however, if you prefer a thicker soup, this will easily do the trick!
  4. Top it off – One of my family’s favorite parts of this soup is getting to add just what they like on top. We set the toppings on the table and let each person make their own masterpiece in their bowl. It makes dinner interactive and fun!

Recipe Short Cuts

If you need to make this recipe, but are extra short on time, here are a few ideas that can help make this recipe even faster!

  • Cook the ground beef ahead of time– You can brown the ground beef, drain and store the meat up to 3 days in advance when stored in the refrigerator, or up to 6 months in advance when stored in the freezer.
  • Pre-make the soup– Soup is one of those things that just gets better as it sits in the refrigerator. You can make this soup up to 3 days in advance and then just return to the pot and reheat when ready to serve.
  • Prepare soup as a freezer meal– you can make this as a freezer meal to have it ready to go with almost no prep, up to 6 months in advance. See freezer meal directions below.

Recipe Variations

If you love this recipe as much as we do and want some quick ways to change it up for variety, these little tips will do the trick!

  • Cheesy Beef Enchilada Soup– Brown the ground beef with onions and seasonings as directed. While it is still hot, stir in 8 oz (1 block) cream cheese and 4 oz sharp cheddar cheese. Then proceed with recipe as directed. At the end, top with additional shredded cheese.
  • Spicy Beef Enchilada Soup– Use hot red enchilada sauce in place of mild or medium. To increase the heat further you can add 1/2 tsp cayenne pepper to the taco seasoning, and garnish with sliced jalapeño peppers.
  • Chicken Enchilada Soup– To make this soup with chicken, sauté the onion and taco seasoning with 1 tbsp olive oil. Then add shredded (or rotisserie) chicken to the mixture. Continue with recipe as directed.

Freezer Meal Instructions

To prepare this soup recipe as a freezer meal:

  • Combine the ground beef, taco seasoning, and diced onion in a skillet and brown over medium high heat until no longer pink. Drain any grease or excess liquid.
  • Add the Zoup! Beef Bone Broth, enchilada sauce, tomatoes, corn, black beans and green chiles and stir to combine.
  • Let the mixture cool to room temperature, then package it in freezer bags or freezer friendly containers.
  • Freeze.
  • When ready to cook, add soup(frozen or thawed) into a pot and bring to a boil, then reduce and simmer for 10 minutes.

Beef Enchilada Soup Leftovers

If you have leftovers after making this soup, then it is your lucky day! They save and reheat well and can make the start of another delicious lunch or dinner.

To save leftovers, separate into meal sized portions and then place in an airtight container and store:

  • in the refrigerator for 3-4 days
  • in the freezer up to a month

Ingredients

  • 2 lbs lean ground beef
  • 3 tbsp taco seasoning
  • 1 onion
  • 2 cans red enchilada sauce, (14.5 oz)
  • 1 jar Zoup! Beef Bone Broth, (32 oz)
  • 1 can diced tomatoes, (15 oz) not drained
  • 1 can sweet corn, (15 oz) drained
  • 1 can black beans, (15 oz) not drained
  • 1 can green chiles, (4 oz) not drained

Toppings (optional)

  • Corn tortillas, cut into strips
  • Sour cream
  • Cheddar cheese, shredded
  • Cilantro, diced

Instructions

  • Combine the ground beef, taco seasoning, and diced onion in a skillet and brown over medium high heat until no longer pink. Drain any grease or excess liquid.

  • Add the Zoup Beef Bone Broth, enchilada sauce, tomatoes, corn, black beans and green chiles and stir to combine. Bring to a boil, then reduce heat to low and let simmer for 10 minutes.

  • Serve hot with corn tortillas cut into strips, and your choice of sour cream, cheddar cheese, or chopped cilantro.

    I added Masa Flour to give it additional flavor. Added ground hot sausage with the beef, Hot enchilada sauce, Rotel tomatoes and pinto beans, 3 cups of sharp cheddar cheese while cooking. We love spicey!!! Awesome soup.

    This was so delicious, and easy! I made it exactly as written, except for using half beef, half turkey. I only topped it with a little cheese. This will be a staple in my fall / winter rotation.
